This is a 7/0 Jungle Don that I tied and it is the first salmon fly that I was able to tie multiple top crests on, that worked.

Do you have any tips for beginners on tying those top crests?

I use a small pair of needle nose unserrated pliers to flatten and fold an upward angle to the quill (gently) and then tied them on one at a time on top of each other. Other than that about all I could suggest is practice, practice, practice. I now take apart anything that I don't like on these flies and keep trying until I get it to my satisfaction. I still have a long way to go looking at pictures online that look absolutely perfect to me. You can also find good resources for tying these flies on youtube, like Rich Lamonte and several other tyers.
