Fish "will" eat those, happily and often if you present them correctly. I'm newer to fly fishing having started this year and targeted BGs and bass to get me used to the idea, casting, fly tying, leaders (oh don't forget to learn about leaders!), and reading the water. BGs aren't that particular and are a blast to catch. Your Gill Buggs look great. I tied something similar I found in a video online called the Briminator that they pound on too. Anything buggy looking and you'll be setting hooks! My son fishes then under a small float and the gills keep him quite busy. The other night we were running out of daylight and I suggested a black wolly bugger lead head jig I toed him. On the second cast something huge grabbed it, ran (swam actually), and snap....clean off before the boy could react. HIs face was priceless! Enjoy!
