For me, whether to half hitch between steps is decided by whether I lose more time half hitching than I save on the rare occasions that the fly unravels. So I don't half hitch because it takes me more time than I save. I can't remember the last time a fly unravelled on me. I know it has been years.

I suppose as half hitching becomes an "automatic" part of a fly tier's routine, the equation could flip and a person could save more time by half hitching. Or if a person ties really complicated patterns or show flies like the classic Salmon Fly Patterns, it would be important to half hitch.
