Yellowtail - Thresher Souvalaki

Didn't fish tonight. What's that, you say? Well, there are other important things in life, like good food - especially seafood.

 

One of the side benefits of living on the Cape and working in a big bait and tackle shop is what the customers bring in to us. Yesterday, two customers brought separate offerings of Thresher Shark and Yellowtail - fresh from south on Nantucket.

 

Tonight, I barbecued fresh Yellowtail & Thresher Souvalaki. The Souvalaki is a Greek recipe for shishkabob and is great with any kind of firm fish or seafood. Here's the recipe:

 

For the Fish and Marinade:

1-1/2 lb. swordfish or other steaks about 1-1/2"

thick.

3 tablespoons X.V. Olive Oil

3 tablespoons fresh Lemon juice (or lime)

3 tablespoons white wine - preferable dry

2 fresh garlic cloves, minced or squeezed

1 tablespoon chopped fresh Oregano or 1-1/2 if

dried

1 teaspoon grated lemon

1 teaspoon salt or more to taste

1 teaspoon freshly ground black pepper

 

For the Kebabs:

24 Bay leaves

1 medium onion, quartered

Lemon wedges for serving

 

Preparation and cooking:

1. wash steaks in cold water, drain and dry

With paper towels. Cut into cubes while you

make the marinade

 

2. Combine wine, garlic, oil lemon juice,

Oregano, lemon, salt and pepper. Whisk till

blended and salt dissolves. Add fish and turn

to coat and let marinate at room temp for 30

minutes. Soak Bay leaves in cold water for 20

minutes.

 

3.Preheat grill to high.

 

4.When ready to cook, break onion quarters into

Individual layers, drain the Bay leaves. Thread

fish onto skewers with piece of onion and bay

leaf between each.

 

5. Oil grill grate and arrange kebabs on it and

grill, turning with tongs until brown on

outside and opaque on inside - 2-3 minutes.

baste with mainade during first minute of

cooking. Serve with lemon wedges.

 

I like it best with a nice white wine like Pinot Grigio, a good Portuguese Matuse or Tangueray & Tonic. Tonight I had it with a couple Red Stripe beers. Ummm................
